Today, after a long while without doing so, I am going to write about a tripel. However, in a crazy twist, the object of this post will be a French tripel rather than a Belgian one (I'm a daredevil).

Finding a French tripel in Madrid is not very common, although they are starting to get to the shelves little by little, with brands like Vivat Triple or the one I am going to talk about today, La Belle Confidence.

This organic beer is the fruit of an association between Maile's Cafe and La Brasserie du Pays Flamand. From what I have read, La Belle is Maile's Cafe's brewing brand and seems to operate by way of contract brewing through other brewers.

The product of this relationship with La Brasserie du Pays Flamand, Confidence, is an amber colored tripel with little foam and a moderate head retention. 

It is meant to have smells and flavors reminiscent of tea and violets, although I have to say that I am unable to find them. Instead, I get a short-lived hoppy and spicy aroma, which is quickly drowned by sweeter smells from the malts, like honey and caramel.

The flavor is also on the sweet side, with honey coming through strong, although slightly compensated by a biscuity, bready taste which keeps it from getting too cloying. 

The end and aftertaste also leave your mouth tasting like honey, with just a little bit of alcohol and warmth at the end.

The honey flavors in this beer would probably go fantastically with honey glazed pork ribs, matching the honey and washing away the fat. The beauty of it is, Confidence has a pretty subtle body, making it ideal as an accompaniment for heavier foods, but is also great to drink alone, with its alcohol content serving as sustenance enough when food doesn't quite do it. Just like a good tripel should.
