Having done a bit of research and read some good reviews, I have decided on Deus, from Brouwerij Bosteels as the first of the beers for NYE.

After all, a bière de champagne is a nice wink to a traditional beverage for such a time of year. 

This beer is actually made partly in accordance with the méthode champenoise, and Brouwerij Bosteels, brewer of such delights as Kwak and Tripel Karmeliet, well deserves my blind trust.
